About Jarvis Estate

Jarvis Estate is the most spectacular underground winery in Napa Valley, a 45,000-square-foot cave complex carved entirely into the volcanic hillside of Atlas Peak, complete with an underground waterfall, a stream that runs through the barrel room, and a crystal-lined grotto that looks like something from a fantasy novel. Founded in 1992 by William and Leticia Jarvis, the estate was built on the conviction that wine should be made entirely underground, in conditions that replicate the temperature and humidity of the earth itself. The result is a winery that is invisible from the surface and unforgettable from within.

The estate covers 37 acres of vineyard on the volcanic slopes of Atlas Peak, planted to Cabernet Sauvignon, Cabernet Franc, Chardonnay, and the unusual Tempranillo. The Atlas Peak location, at elevations above 1,200 feet, provides the intense sunlight and thin volcanic soils that produce deeply colored, concentrated fruit. The mountain terroir adds a mineral dimension to the wines that valley-floor vineyards rarely achieve. The diversity of plantings reflects the Jarvis family's willingness to explore what the mountain site can produce beyond the expected varieties.

Winemaker Dimitri Tchelistcheff, grandson of the legendary Andre Tchelistcheff who transformed Beaulieu Vineyard, continues a family legacy of Napa Valley winemaking excellence. The estate Cabernet Sauvignon is powerful and structured, with the dark fruit and firm tannins of mountain-grown fruit. The Cabernet Franc is aromatic and complex, and the Tempranillo, one of the few planted in Napa Valley, shows the spicy, earthy character of the variety in a California context. The Chardonnay, from cooler cave-mouth vineyard blocks, is balanced and mineral.

The tasting experience at Jarvis is built around the cave tour, a 90-minute journey through the underground complex that reveals the waterfall, the stream, the crystal chamber, and thousands of aging barrels in progressively deeper sections of the mountain. The tour culminates in a seated tasting in an underground room where the natural humidity and constant temperature create conditions that the Jarvis team believes are ideal for both barrel aging and human contemplation. The $100 tasting fee includes the full tour and portfolio.

Jarvis demonstrates that a winery can be both an engineering marvel and a genuine producer of excellent wine. The caves are spectacular, but they serve a real winemaking purpose: the constant underground temperature and humidity eliminate the need for climate control, reducing energy use and providing ideal conditions for barrel aging. The wines benefit from this environment, and the tasting experience benefits from the drama of discovering them 100 feet beneath the surface of the mountain.
